Batch 006 note: brine was too salty at day 4 — diluted by removing 4 cups and replacing with plain water. If too salty, dilute incrementally. Surface scum and white film are normal — not a sign of failure. Do not use iodized salt. Tannin source (grape/oak leaf) keeps pickles crisp.
