REBUILT 09/03/26 for USR369's preferred method: free-form (no loaf pan), rattan banneton for proofing, Dutch oven for baking -- his normal routine, same vessel/basket as Bakes #11/#12/#13. HONEST TRADEOFF: a Dutch oven's whole design point is trapping steam to build a THICK, crackly crust once the lid comes off (confirmed across every source researched) -- that's the opposite direction from 'soft crust.' There's real tension between 'use my normal Dutch oven + banneton setup' and 'get a soft crust' that a loaf-pan version doesn't have. The adjustments here work WITHIN that constraint rather than pretending it isn't there: (1) extend the lid-ON/steam phase to nearly the whole bake instead of the usual half-and-half split, (2) cut the lid-off dry-heat finish down to 5-8min instead of 20-25min -- that phase is specifically what hardens/cracks the crust, (3) score shallower than usual, (4) light water spray on top right before baking for a bit more surface moisture at the start, (5) lean harder on butter-brush-after + towel-cover-while-cooling, since those do more of the actual crust-softening work here than they would in the loaf-pan version. Expect a noticeably softer crust than a standard thick-crust Dutch oven bake, but likely still with a bit more character/chew than the loaf-pan version of this same recipe -- that's the realistic ceiling for this vessel. FULL HISTORY: started as a straight commercial-yeast draft (corrected to the real sourdough Large Loaf base), added oil then optional honey, briefly explored a two-loaf-pan version (dough totals ~1118-1148g, too big for one standard 9x5 pan) before USR369 confirmed he wants to stick with his usual free-form Dutch oven + banneton setup instead.
