CHOCOLATE VARIANT: Replace 1/2 cup flour with 1/2 cup unsweetened cocoa powder (43 g). Add 2-3 tbsp extra white sugar and 1-2 tbsp extra vegetable oil to balance the cocoa's bitterness and dryness. Swap the anise extract for vanilla or almond extract in this variant. Optional: fold in 3/4 cup mini chocolate chips (128 g) for a double-chocolate version -- combined with the cocoa swap, total chocolate content is 171 g. CITRUS VARIANT: Add zest (lemon or orange) plus its matching extract. If also adding fresh juice, compensate with roughly 1 to 1 3/4 cups extra flour to keep the dough at the right consistency.
