No added pectin - lemon juice provides the acid/set. Softer, more spreadable jam texture, longer cook time than pectin version. Standard batch = 4 cups mango. ADDING PECTIN (Original/Classic yellow-box Sure-Jell, confirmed on hand 07/31/26): 4 cups mango pulp + 1 box Sure-Jell + 3.5 cups sugar (corrected per box's own cooked-recipe ratio: 2qt fruit/7 cups sugar scaled to 4 cups fruit - NOT 4.5 cups, that was wrong) + 2 tbsp lemon juice. WHEN TO ADD PECTIN: mix pectin into the fruit+lemon juice in the pot BEFORE heating. Then: bring to full rolling boil stirring constantly, add all sugar at once, return to full rolling boil, boil hard exactly 1 min stirring constantly, remove, skim foam, jar hot. Yields ~4 half-pint jars (corrected - not 8).
