ingredients
[{"amount":"2","unit":"","name":"square cakes — Birthday Cake (ID:16), fully baked and cooled completely"},{"amount":"1","unit":"pint","name":"coffee ice cream — slightly softened (not melted)"},{"amount":"1","unit":"batch","name":"Sour Cream Frosting (ID:15) — coffee variation recommended"}]
steps
[{"text":"Bake both square cakes (ID:16). Cool completely — do not rush. Warm cake melts ice cream instantly."},{"text":"Place first cake layer on a flat surface or cake board. Spread softened coffee ice cream evenly across the top — about 1 inch thick. Work quickly."},{"text":"Place second cake layer on top of ice cream. Press gently and evenly."},{"text":"Wrap entire assembled cake tightly in plastic wrap. Freeze minimum 2 hours — overnight is better. Ice cream must be fully refrozen and firm before frosting."},{"text":"Make Sour Cream Frosting (ID:15) with coffee option — 1-2 tbsp instant coffee dissolved in 1 tbsp hot water, cooled, mixed in."},{"text":"Remove cake from freezer. Work quickly — frost top first, then all four sides. Use an offset spatula or back of a spoon. Return to freezer for 30 min to set the frosting."},{"text":"Slice and serve straight from freezer. Let sit 3-5 min before cutting for cleaner slices."}]

notes
TIMING: This is a multi-step cake — plan ahead. Bake day 1, assemble and freeze day 1 or 2, frost and serve day 2 or 3. ICE CREAM TIP: Soften ice cream just enough to spread — scoop and let sit 5-10 min at room temp. Too soft = floods the sides. Too hard = tears the cake. FROSTING TIP: Frost straight from freezer — the cold cake helps the frosting set fast. Work quickly in sections. SLICE TIP: Use a sharp knife dipped in hot water and wiped dry between cuts for clean slices. ALTITUDE NOTE: Cakes take ~40 min per pan at 5,500ft — see ID:16 for full bake notes.
